Cherry Butter

2 quarts of pitted cherries
1 cup water
1 cup crushed pineapple
2 tbsp lemon juice
4 cups of sugar

Combine all ingredients. Cook slowly stirring until thick. Cook and enjoy on pancakes or toast.

Cherry Clafouti

3 eggs
1 cup milk
½ cup all-purpose flour
¼ cup granulated sugar
1 tsp vanilla
2 cups pitted dark sweet cherries
Powdered sugar

Preheat oven to 350 F. Grease 8 or 9 inch baking dish. Beat eggs, milk, flour, granulated sugar and vanilla with a hand beater until smooth.

Spread cherries in dish. Pour batter over cherries. Bake 45-50 minutes until puffed and golden brown. Sprinkle with powered sugar. Serve warm.
